Torta di Mela
This very traditional Italian dessert is an utterly beautiful, delicious, moist slice of heaven. Soooo good! And yet so easy too.
Ingredients
700g apples (any variety), ½ small chopped, ½ thin sliced
1 lemon, juiced and zested
250g flour
1 tsp baking soda
pinch of salt
70g butter
150g sugar
½ tsp vanilla
3 eggs
1c milk
1 tbsp brown sugar
Instructions
Preheat oven to 175C/350F.
Prepare apples, each in its own bowl with lemon juice to prevent browning.
In a large bowl mix flour, baking soda, salt.
Using a hand or stand mixer, cream butter and sugar. Add lemon zest and vanilla. Reduce speed to low, add eggs one at a time.
Add 1/3 of flour mixture to egg mixture. After it is incorporated add ½ cup of milk. Then add 1/3 flour, then all remaining milk, then the final 1/3 flour. Allow batter to be fully incorporated before adding next batch.
Mix in the chopped apples.
Pour batter into an oiled 8”-9” spring-form baking pan.
Arrange apple slices on top of batter.
Sprinkle with brown sugar.
Bake for 50-60 minutes.
Allow to cool fully before eating.
