Olive Oil

In Italian, the word for olive tree is masculine – olivo – and the fruit is feminine – oliva.

The issue that confronted us at La Predicata was that most of the trees, and the grove in general, had been completely abandoned for at least 20 years.  The actual restoration of the grove took a couple of years to accomplish in order to clean up the overgrown chaos of the property.  Then it is time to rehab the actual trees themselves - a very complicated and multi-year process, especially on abandonded trees. To bear fruit, olive trees must be structured and shaped properly, and pruned constantly. But every year one sees the yield, the harvest of olives, slowly increase, unless, of course, you have a drought or hail or an infestation….

이탈리아어로 올리브 나무는 - Olivo- 남성형 명사이고, 올리브 열매는 - Oliva - 여성형 명사로 불린답니다.

20여년간 아무 보살핌 없이 버려졌던 La Predicata 농장을 처음 맞닥뜨렸을땐 제대로 된 농장모습으로의 복구가 큰 문제였습니다. 마치 야생의 숲처럼 혼돈 그 자체였던 이곳을 현재의 농장다운 모습으로 다듬는 것 만으로도 몇 년의 시간이 걸렸습니다. 특히 방치되었던 올리브 나무들의 과실수로서의 재활 문제는 매우 복잡하고 다년간의 과정으로 시간이 소요 됐는데, 올리브 열매를 잘 맺으려면 올리브 나무의 수형이 적절하게 구조화 되어야하고, 그러기 위해선 끊임없는 가지치기를 해야 하지요. 그 정성이 들어간 만큼 올리브의 수확량은 매년 서서히 증가해 오고 있습니다. 단, 늘 언제 일어날지 모르는 이상기후로 인한 치명적 가뭄이나 냉해,폭우,우박 등 비롯한 해충의 피해만 없다면요….
