Olive Trees

Olive groves are magical places and the olive trees themselves are incredible organisms.  They can withstand killer frosts, forest fires, transplanting and utter neglect, and they can live for centuries. 

We first fell in love with olive trees when we were searching for the property.  That love affair led us to the realization that we wanted to find a very old, neglected or abandoned olive grove and bring it back to producing great olives and oil.  Not only do stately yet uncared for and abandoned old olive trees seem to need their dignity restored, but we also knew that the older trees with their deep root systems produce the best olives. 

La Predicata is blessed with having a superb old growth olive grove with some of the trees being over 500 years old – to the days of Caravaggio and Shakespeare.  And every olive tree is utterly unique.  They are so gnarled and twisted and misshapen that each evolves its own personality and one naturally therefore develops a different relationship with different trees.  They have become a part of our family.

올리브 나무 숲은 마법의 장소이며 올리브 나무 자체는 놀라운 유기체라 할 수 있습니다. 그들은 치명적인 서리, 산불, 이식, 오랜 방치 등에도 아주 굳건하게 잘 견디며 수 세기 동안 살 수도 있지요.  Umbria 지역 쪽에서 우리의 제 2 의 삶의 터를 찾아 보다가 올리브 나무와 사랑에 빠졌고, 오랜 시간 돌보지 않았음에도 위풍당당하게 자라고 있는 올리브 나무들의 존엄성을 회복해야 줘야 겠다는 생각까지 이르게 해줬지요. 수 세기를 살아 오면서 뿌리가 깊은 오래된 올리브 나무들은 더 높은 퀄러티의 올리브와 올리브유를 생산한다는 것도 잘 알고 있었던 터라, 수십년 방치되어 왔던, 마치 버려진 듯한 이 곳을 우리들만의 훌륭한 올리브와 올리브 오일을 생산하는 곳으로 다시 만들어야겠다는 마음으로 이 과수원을 소유하게 되었습니다.

가늠하기 힘들 만큼 오랜 세월의 올리브 나무들이 살고 있는 La Predicata 는 정말 축복받은 곳이라 할 수 있는데, 이곳엔 젊은 올리브 나무들부터 Caravaggio와 Shakespeare 시대에 이르기까지 500년은 족히 넘었을 나무들이 함께 살고 있으며, 그중 몇 그루는 1000년도 넘었을 거라는 얘기를 종종 듣곤 합니다. 매우 독특한 기형적 형태들을 가지고 있는 올리브 나무들은 비틀어지고 꼬여져서 각자 고유한 성격을 가진 존재처럼 우리 인간과의 각별한 관계를 이끌어 내기에 충분했고 그리하여 곧 우리 가족의 일부가 되어버렸습니다
